Take a Walk In Our Shoes on Crock-Pot Thursday: Mexican Stuffed Shells [Video]

This Crock-Pot Thursday dish was an employee suggestion! Today we tried Mexican Stuffed Shells and Cheesy Jalapeno Corn Muffins. Have you ever wondered what it is like to be in our office on Crock-Pot Thursday? Today’s video will take you for a walk in our shoes as we celebrate CPT! See the video and recipes below.

 

Mexican Stuffed Shells

  • 1 pound ground beef
  • 1 package low-sodium taco seasoning
  • 4 ounces cream cheese
  • 14 to 16 jumbo pasta shells
  • 1½ cup salsa
  • 1 cup taco sauce
  • 1 cup Cheddar cheese, shredded
  • 1 cup Monterrey Jack cheese, shredded
  • 3 green onions
  • Sour cream

 

DIRECTIONS

  1. Preheat oven to 350°F.

  2. In a frying pan cook ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover and simmer until cheese is melted. Blend well. Set aside and cool completely.

  3. While ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on cutting board/baking sheet so that they don’t stick together.

  4. Pour salsa on bottom of 9×13-inch baking dish. Stuff each shell with the meat mixture. Place shells in 9×13-inch pan open side up. Cover shells with taco sauce. Cover with foil and bake for 30 minutes.

  5. After 30 minutes, add shredded cheese and bake for 10 to 15 more minutes, with the foil removed. Top with any condiments you’d like (green onions, black olives, etc.) Serve with sour cream and/or more salsa.

Shortcut Jalapeno & Cheddar Cornbread Using Jiffy

IMG 1301INGREDIENTS

  • 1 box of Jiffy Corn Muffin Mix
  • 2 T of melted butter
  • 1/3 cup of milk
  • 1/2 cup of shredded cheddar cheese
  • 1 can of sweet corn - drained
  • 1 medium Jalapeno diced (or) 2 T of canned jalapeno diced
  • 1 egg

 

DIRECTIONS

  1. Preheat oven to 375 degrees

  2. Using a large mixing bowl, add the corn muffin mix and all of the other ingredients and mix until the dough is moist

  3. Grease a loaf pan and pour the mixture into the pan

  4. Bake at 375 degrees for about 20 minutes - or until a toothpick inserted in the middle comes out clean

  5. Bread will still be very moist when done, don't let that confuse you with it not being cooked
